Our production is harvested on flat soils and hill slopes free of frost and the size of the fruit is concentrated in the 50 caliber. To start the harvest we monitor the maturity to ensure that a minimum of dry matter and oil, to ensure a finished product , of good flavor, stable and suitable for any form of marketing in the target markets.
